Pannacotta ai mirtilli con cuore di geleè

La pannacotta ai mirtilli con cuore di gelee e' un fresco dessert, semplice da preparare e delizioso, perfetto da servire nella stagione estiva.
Il suo bellissimo colore naturale e' una gioia per chi lo vede e per chi lo gusta.
Potete servire questa pannacotta semplicemente accompagnata da mirtilli freschi,  il suo fresco e genuino sapore non ha bisogno di essere esaltato da altri ingredienti
Vediamo come preparare questo delizioso dessert.

Blueberry pannacotta

Ingredienti per 8-10 pirottini
Per il cuore di gelee':
  • 150g di mirtilli freschi
  • succo di mezzo limone
  • 50g di zucchero
  • 3 cucchiai di acqua
  • 5g di gelatina in fogli
Per la pannacotta:
  • 750ml di panna fresca liquida 
  • 100ml di latte intero
  • 70g di zucchero
  • 1 cucchiaino di estratto di vaniglia
  • 150g mirtilli freschi
  • 10g di gelatina in fogli
  • il succo di mezzo limone
  • 2 cucchiai di acqua
Procedimento:
  1. Mettete in surgelato i pirottini di silicone, questo favorira' il rapprendersi del primo strato di pannacotta.
Prepariamo la gelee ai mirtilli.
  1. Mettete i fogli di gelatina (per la gelee) in ammollo in acqua fredda per 10 minuti.
  2. Nell'attesa lavate ed asciugate i mirtilli e versteli in un pentolino insieme allo zucchero, al succo di limone e all'acqua.
  3. Cuocete i mirtilli su fuoco moderato, facendolo sobbollire per circa 15minuti.
  4. Quando il composto si sara' addensato  toglietelo dal fuoco e frullatelo con un frullatore ad immersione. 
  5. Strizzate la gelatina ed unitela alla salsa di mirtilli, mescolate in modo da farla sciogliere completamente e trasferite il composto in una ciotola a raffreddare.
Ora prepariamo la pannacotta.
  1. Mettete i fogli di gelatina (per la pannacotta) in ammollo in acqua fredda per 10 minuti.
  2. Nell'attesa lavate ed asciugate i mirtilli e versteli in un pentolino insieme allo zucchero, al succo di limone e all'acqua.
  3. Cuocete i mirtilli su fuoco moderato, facendolo sobbollire per circa 15minuti.
  4. Quando il composto si sara' addensato  toglietelo dal fuoco e frullatelo con un frullatore ad immersione. 
  5. Premete la purea nel colino, in modo da estrarne ogni goccia. Tenete da parte.
  6. In un pentolino versate il latte, la panna, lo zucchero restante, la vaniglia e fate scaldare a fuoco basso, in modo da sciogliere lo zucchero. Fate molta attenzione alla temperatura, il composto deve arrivare a scaldarsi per bene sfiorando il bollore senza pero' mai bollire. Togliete dal fuoco.
  7. Unite al composto il succo di mirtilli e mescolate fino a quando il composto avra' assunto un colore omogeneo.
  8. Strizzate la gelatina ed unitela  al composto, mescolate con cura e versate  la vostra pannacotta  nei pirottini di silicone freddi, riempiendoli poco  al di sotto della meta'.  
  9. Mettete a raffreddare in frigorifero fino a quando la pannacotta si sara' leggermente rappresa (circa 10minuti)
  10. Trascorso il tempo necessario prelevate con un cucchiaino la gelee' di mirtilli e mettetene un po' sopra la pannacotta, al centro di ogni pirottino. 
  11. Mescolate la pannacotta avanzata e versatela negli stampini fino a riempirli. Lasciate intiepidire (a temperatura ambiente) e trasferite la pannacotta in frigorifero.
  12. Lasciate in frigorifero per almeno 12h prima di servirla. 
  13. Se volete accelerare i tempi di raffreddamento, mettete i pirottini  con la pannacotta gia' fredda in surgelato per un paio d'ore.  Questo vi permettera' anche di estrarre piu' agevolmente la vostra pannacotta dallo stampo. Laciate scongelare per 30minuti e servite la vostra bellissima e buonissima pannacotta ai mirtilli con cuore di gelee'.



Ingredients for 8-10 cups
For the heart of gelee ':
  • 150g of fresh blueberries
  • juice of half a lemon
  • 50g of sugar
  • 3 tablespoons of water
  • 5g of gelatin in sheets
For the pannacotta:
  • 750ml of double cream 
  • 100ml of whole milk
  • 70g of sugar
  • 1 teaspoon of vanilla extract
  • 150g fresh blueberries
  • 10g of gelatin in sheets
  • the juice of half a lemon
  • 2 tablespoons of water
Method:
  1. Put the silicone cups in frozen food, this will facilitate the thicken  the first layer of pannacotta.
Let's prepare the blueberry gelee.
  1. Put the gelatine sheets (for the gelee) to soak in cold water for 10 minutes.
  2. While waiting, wash and dry the blueberries and pour them into a saucepan together with the sugar, lemon juice and water.
  3. Cook the blueberries over medium heat, simmering for about 15 minutes.
  4. When the mixture has thickened, remove it from the heat and blend it with an immersion blender. 
  5. Squeeze the gelatin and add it to the cranberry sauce, mix so that it melts completely and transfer the mixture to a bowl to cool.
Now let's prepare the pannacotta.
  1. Put the gelatine sheets (for the pannacotta) to soak in cold water for 10 minutes.
  2. While waiting, wash and dry the blueberries and pour them into a saucepan together with the sugar, lemon juice and water.
  3. Cook the blueberries over medium heat, simmering for about 15 minutes.
  4. When the mixture has thickened, remove it from the heat and blend it with an immersion blender. 
  5. Press the puree into the colander, so as to extract every drop. Keep aside.
  6. In a saucepan pour the milk, cream, remaining sugar, vanilla and heat over low heat to dissolve the sugar. Pay close attention to the temperature , the mixture must heat up well, touching the boil without ever boiling. Remove from the heat.
  7. Add the blueberry juice to the mixture and stir until the mixture has taken on a homogeneous color.
  8. Squeeze the jelly and add it to the mixture, mix carefully and pour your pannacotta into cold silicone cups, filling them just below half.  
  9. Chill in the refrigerator until the pannacotta has slightly thickened (about 10 minutes)
  10. After the necessary time has elapsed, take the blueberry jelly with a teaspoon and place some on top of the pannacotta, in the center of each cup. 
  11. Mix the leftover pannacotta and pour it into the molds until they are full. Let it cool (at room temperature) and transfer the pannacotta to the refrigerator.
  12. Leave in the refrigerator for at least 12 hours before serving. 
  13. If you want to speed up the cooling times, put the cups with the already cold pannacotta in frozen food for a couple of hours.  This will also allow you to more easily extract your pannacotta from the mold. Leave it to defrost for 30 minutes and serve your beautiful and delicious blueberry pannacotta with a  gelee ' heart.
