Questi panini, veloci e semplici da preparare (non necessitano di tempi di lievitazione), sono insaporiti dal formaggio Gouda, erba cipollina freschissima e tanta birra, un connubio veramente squisito.
Ho trovato questa curiosa ricetta in una rivista di cucina tedesca e me ne sono presto innamorata.
Potete servire questi panini per accompagnare salumi e verdure fresche o per un aperitivo veloce e stuzzicante. Il loro fragrante aroma vi conquistera', come ha conquistato anche me.

Ingredienti per 8/10 panini
- 1 mazzetto di erba cipollina fresca
- 125g formaggio Gouda o similare
- 420g farina
- 10g lievito istantaneo per focacce e torte salate
- 1/2 cucchiaino di sale fino
- 50g burro freddo
- 350ml Birra
Procedimento- Lavate ed asciugate l'erba cipollina e tagliatela a piccoli pezzetti.
- Grattugiate il formaggio con una grattugia a fori larghi.
- In una ciotola mescolate la farina con il sale, il lievito e l'erba cipollina. Tagliate il burro in piccoli pezzi ed unitelo alla farina. impastate con le mani fino ad ottenere un composto simile a tante briciole. Unite il formaggio e mescolate.
- Disporre il composto a fontana e versate nel centro tutta la birra e cominciate ad impastare. Se l'impasto risultasse troppo bagnato aggiungete un po' di farina ed impastate fino ad ottenere un impasto omogeneo e non appiccicoso.
- Dividete l'impasto in 8-10 palline e sistematele sulla teglia da forno ricoperta di carta forno
- Accendete il forno in modalita' ventilata a 200gradi (180gradi se statico)
- Infornate e lasciate cuocere per 20-25 minuti, fino a quando la superficie dei panini avra' assunto una bella colorazione ambrata. Sfornate i panini e gustateli tiepidi o a temperatura ambiente.
Ingredients for 8/10 buns
- 1 bunch of fresh chives
- 125g of Gouda cheese or similar
- 420g of flour
- 10g of instant yeast for focaccia and savory pies
- 1/2 teaspoon of fine salt
- 50g of cold butter
- 350ml of beer
Method
- Wash and dry the chives and cut them into small pieces.
- Grate the cheese with a large hole grater.
- In a bowl, mix the flour with the salt, baking powder and chives. Cut the butter into small pieces and add it to the flour. Knead with your hands until you get a mixture similar to many crumbs. Add the cheese and mix.
- Arrange the mixture in a fountain and pour all the beer in the center and start kneading. If the dough is too wet, add a little flour and knead until a homogeneous and non-sticky dough is obtained.
- Divide the dough into 8-10 balls and arrange them on the baking sheet covered with parchment paper
- Turn on the oven in ventilated mode at 200 degrees (180 degrees if static)
- Bake and cook for 20-25 minutes, until the surface of the buns has taken on a nice amber color. Remove the buns from the oven and enjoy them warm or at room temperature.
